Explora PERFORMER is an ideal solution for all those businesses like
supermarkets and gastronomy providers who make heavy-duty use of
full-load ovens to cook meats, such as chicken, pork and beef.

Special trays

The special spare-rib trays come with a tank which
avoids spattering and collects the cooking fat
which then drains
away through a central hole and is channelled to the oven bottom.

How the Explora Performer works

By means of an automatic three-way system, Explora Performer distinguishes
intensive cooking processes from the washing phase
and automatically lines up the valve,
thus stopping a build-up of fat and preventing a blocked outlet.
This secures two advantages – one for your business and one for the environment.

COOKING-FAT COLLECTION

The cooking fats collect on the oven bottom
and are automatically channelled into a
special collection tank
placed in the unit beneath.

WASHING OUTLET

On the other hand, when the washing phase begins,
the Explora Performer system channels the
waste water into the sewer system.

HACCP

All HACCP data is recorded in real time on the new Explora Performer oven. Dates, cooking times, temperature, the pre-heating process and the number of times the oven door is opened. Useful and accurate information which can be easily accessed. A graph in colours highlights the recorded data; the information can be saved on a USB key and printed in pdf format, even from a remote station via the Eon Cloud platform.

The three-way valve facilitates the disposal of food waste and cooking fats thanks to an automatic software-controlled system; instead of being expelled into the discharge system as would normally happen, this residual waste is channelled into a tank and this reduces impact on the environment.
